Chef Paulo Machado leads the second edition of the MS Gastronomic Circuit as ambassador

Mato Grosso do Sul celebrates its culinary heritage with the second edition of the Gastronomic Circuit “Isto é MS – Sabores da Terra”, which will be held between May 6th and 21st and will have Mato Grosso do Sul chef Paulo Machado as its ambassador. The circuit serves as a showcase for the state’s rich local gastronomic traditions and ingredients, consolidating the position of Mato Grosso’s southern cuisine on the national and international stage.

In addition to Paulo, the circuit will be curated by chef Felipe Caran, who will represent the flavors of Mato Grosso do Sul. The participating restaurants in the cities of Campo Grande, Corumbá and Três Lagoas, will present dishes that harmonize with the Mato Grosso do Sul culture. gross.

“I take on the mission of promoting our gastronomic identity to both local residents and international visitors who arrive in search of the natural beauty of Pantanal or Bonito”, declared Machado.

The circuit, which already moves the culinary scene in the state’s main cities, offers support to local establishments that value producers and farmers in the region, strengthening the local economy.

Establishments (restaurants, bars, burger restaurants and cafes) can register until April 8 and the goal is to reach 120 participants.

According to the regulations, registered establishments will have to develop a dish with at least one listed regional and Pantanal ingredient: baru, pequi, guavira, nicola, sun-dried meat, bee honey native to the Pantanal, Maracaju sausage, yerba mate, tapioca starch sour and sweet, flavoró corn flour, free-range chicken, painted, mocotó, offal, buffalo derivatives, coriander, pacu, cassava flour from Furnas, palm heart/guariroba, cassava, traíra and sobá.

At the opening of the event, on May 6th, in Campo Grande, the Gastronomic Circuit passport will be launched, which consists of a pocket guide to be distributed at the airports and hotels in the four participating cities, providing registered establishments with addresses and their dishes. .
